Rice flour, tapioca flour, potato starch, xanthan gum, salt.
Directions
Pour mix into a bowl add 3 large eggs. Mix. Whisk 2 more eggs in a separate bowl. pour egg slowly into flour/egg mixture and mix until dough reaches a somewhat stiff dough consistency. Dough should not be sticky. Remove from bowl and wrap in plastic. Let set 1-2 hours at room temp. Divide dough into 4 sections. Work one section at a time keeping the remaining sections wrapped in plastic. To work, dust section of dough with Blue Hummingbird’s All Purpose flour blend. Flatten slightly then roll as desired. Dough performs well in Kitchen Aid pasta machine or with a manual pasta machine. You may also roll by hand. Keep dough sheets well dusted with flour. Pasta may be frozen for later use.
