Instructions:
BISCUITS
2 1/4 cups biscuit mix 1 large egg
1 1/3 cup buttermilk or milk substitute
Preheat oven to 450º. combine all ingredients in a mixing bowl. Stir until well combined. Spray a muffin pan with non stick pan spray. Scoop batter into muffin cups filling to 2/3 full. Bake 15 to 20 minutes until golden brown. Remove from pan. makes 9-12 large biscuits. Freeze in zipper freezer bag 3-6 months. Reheat in microwave 30 seconds or until soft.
ADD 1/2 cup sugar for shortcake.

Coffee Cake (heat oven to 350º)
Streusel: 1/3 cup biscuit mix, 1/3 cup sugar,
1/2 tsp cinnamon. Combine and set aside.
prepare cake. Combine:
2 Cups biscuit Mix & 1/2 cup sugar in a 4 quart bowl. In a separate bowl whisk together: 1 1/3 cup milk & 1 large Egg
Add milk and egg to dry ingredients. Stir to combine. Spray a 91/2 by 11 cake pan with nonstick spray. Pour 1/2 of the biscuit batter into the pan. Sprinkle 1/2 of the streusel mix over batter. Pour on remaining batter. Top with remaining streusel. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. Serve warm.
Breakfast Bake
heat oven to 350º
1 lb breakfast sausage 1 tsp salt
1 cup cheddar cheese 1 tsp pepper
1 cup hash brown potatoes
1/4 cup diced onion
12 eggs 1 1/2 cup milk
1 cup Biscuit Mix
Brown sausage and drain. Spray a baking dish with non stick spray. Layer sausage, cheese, potatoes, and onion. In a bowl. whisk together eggs, biscuit mix, milk, salt, and pepper. Pour over layered ingredients. Bake in over 45-50 minutes until center is solid and top is golden brown.
Crispy Chicken Strips.
2/3 cup Biscuit mix.. 3 chicken breasts
1/2 cup Parmesan Cheese 1 large egg
1/4 tsp garlic powder 3 Tbsp oil
1/4 tsp Paprika
Combine Biscuit Mix, Cheese, garlic powder and paprika in a 1 gallon zipper bag. Whisk egg until light. Cut chicken into strips and dip into egg. Put dipped chicken into bag and shake to coat. Repeat until all pieces are coated. Place coated chicken on a foil lined baking tray sprayed with non stick spray. Drizzle oil over chicken. Bake at 450º 20 minutes or until inside of chicken reaches 160º. *For dairy free, replace cheese with 1/2 cup very fine bread crumbs or corn meal
For a new taste, replace garlic powder and paprika with 2 teaspoons Mesquite seasoning. Or use 1 teaspoon lemon pepper. Also an excellent coating for fish or pork tenderloin strips.
